I asked you for input and another Crock-Pot recipe was your request so how about one that you may not think of doing, like making a Cheesecake and on top of that one that is friendly for the dieters, too? Well, here it is for you to enjoy.
Ingredients
- (16 oz) Fat Free or Light Cream Cheese or Neufchatel Cheese (softened)
- ½ cup Fat Free of Light Sour Cream
- 2 Eggs
- ½ cup Splenda or Nuvia Sugar Substitute (Several Splenda Coupons Available)($1 off Truvia)
- 2 teaspoons Vanilla
- A pinch of Salt
Graham Crackerish Crust
- Wheat Germ and wheat bran give a “graham” flavor just as if you used Graham crackerts
- 1 ¼ cups almonds
- 2 Tablespoons Wheat Germ
- 2 Tablespoons Wheat Bran
- 3 Tablespoons Splenda or Truvia
- Pinch of Salt
- 6 Tablespoons Butter (Melted)
Directions
First prepare the crust
Preheat Oven to 325
Put almonds in a food processor and grind up until they are fine and have a texture like corn meal
Add the wheat germ, wheat bran, Splenda and salt to the almonds and pulse to combine
Turn processor on and add butter
Run processor until everything is combined (you may have scrape sides to make sure all dry ingredients become mixed with butter)
Put the mixture into a 8” spring form pan and press firmly into place
Bake 10-12 minutes or until just golden around the edges.
Let cool 30 minutes
While cooling begin mixing the cheesecake up
In an electric mixer beat the cheese, sour cream and eggs until very smooth
Beat in the sugar substitute, Vanilla, and salt
Pour into waiting crust
Cover spring form pan with foil, tightly, squeezing it around the rim
Take a large sheet of foil (18” or greater long) and roll it into a loose cylinder
Bend into a circle and place at the bottom of your slow cooker (you have made a rack for you spring form pan)
Pour ¼” of water into the slow cooker
Put the pan on the foil
Cover the slow cooker and cook on high for 3 to 4 hours
After cooking, turn off slow cooker and let cool for 20 to 30 minutes before removing pan for cooker
Chill well before serving
Serves 12 (Each serving: about 241 calories, 21 g fat(depends on light vs. Fat Free Cheese and Sour Cream), and 2 g fiber)
