I discovered this recipe last summer when fresh sweet corn came into season and it was a hit with my family and friends. This is a great recipe to use to make when you can find that great summer corn for cheap! Be aware it make a lot, too so be ready for the left overs

Ingredients
- 12 Ears Fresh Corn
- 4 Slices of Thick Sliced Bacon
- ½ Stick Butter
- Fresh Ground Black Pepper
Directions
Remove the corn from the cob using a knife or corn grater
Lightly mash the kernels so they release some of the corn starch
Slice bacon into small pieces and brown in a skillet
Remove the bacon from the skillet but leave the bacon grease
Add the butter to the bacon grease in the skillet
Over medium heat, add corn to butter and bacon grease
Fry all the ingredients for a few minutes
Lower the temperature and cook for five minutes
Simmer until corn is done about 10-15 minutes
Add pepper to taste
Garnish by adding done bacon slices on the top
(Note: If corn appears to dry add a little milk)
Serves 8
