Sante Fe Apple & Pumpkin Soup

I am going to continue the theme week theme for this week with the theme being pumpkin recipes. Most of the time when you think of using pumpkin you think of pumpkin pie but pumpkin can be used in so many more ways. Since last week was apple week I thought it would be unique to start off this Pumpkin Week with a recipe that uses both apples and pumpkin and here it is courtesy of the Libby Pumpkin website.

FYI, even though this recipe doesn't use it, if you plan on making pumpkin pie or many other baked goods this fall/winter season you will likely need evaporated milk. Ingredients

Directions
  • Combine Apple Nectar, broth and cream in a medium saucepan
  • Bring to a boil
  • Add Pumpkin, sugar and spices
  • Reduce heat to low and cook for 10 to 15 minutes
  • Season with salt and pepper
  • Garnish with cheese
