94th Aero Squadron Beer Cheese Soup; Simply the Best

I have always been a HUGE fan of aviation and while growing up in St. Louis I spent many days sitting at the end of the runway at Lambert International Airport watching the TWA jets depart and land.  Once in college, I stepped it up and visited the 94th Aero Squadron Restaurant often. The restaurant sat on the northside of the airport and was just a stones throw from the runways. Many times I would sit out on the patio, doing my homework, and enjoying the sights and sounds of the bustling airport.  It was just as awesome watching the activity of the airport from the dining table while enjoying a wonderful meal and the beer cheese soup.



When the airport when through expansion in  the early 2000's the restaurant was in the path of progress. Unfortunately, little aviators don't get the same opportunities to watch the bustling activity that once was. In 2001, American Airlines purchased TWA and after 9/11 the amount of air traffic has been cut severely. In addition to the restaurant being in the path of progress, so was the end of the runway observation lots.



Some can still enjoy the food and atmosphere of the 94th Aero Squadron as there are still a few left with one being in Wheeling, IL are the Chicago Executive Airport and another overlooking the runways at Miami. For the rest of us when can still enjoy a piece of the experience with this recipe. In fact, I brought back a bit of my college days by making this soup this weekend. Oh the memories!

Ingredients

  • 6 cups Milk
  • Tabasco Sauce ($0.50 off 1 Tabasco Sauce)
  • 3 Tablespoons Worcestershire Sauce
  • 2 Slices Bacon, chopped
  • 1/3 cup Onion, chopped
  • 3 Chicken Bouillon Cubes 
  • 4 1/2 Tablespoons Cornstarch
  • 1 (16oz) Jar of Cheese Whiz
  • 12 oz Beer


Directions
In a large pot, Brown the bacon.

Pour half of the fat off unless you had extremely lean bacon as you do need a bit of grease

Add onion and cook until the onion begins to become opaque

Add bouillon cubes and as the begin to absorb some moisture take a fork and and crumble them

Cook for just a couple of minutes

Stir in 5 2/3 cup of milk, Tabasco sauce and Worcestershire sauce

Heat over medium heat

While the milk is heating take the additional 1/3 cup of milk and stir in the cornstarch making sure no lumps are left

When the heating milk begins to steam stir in the cornstarch milk

Cook, stirring frequently until soup thickens

Add Cheese Whiz and beer and stir to mix well.

Heat through

Note:  "So how much Tabasco do I use?" you may be asking. Depends on the amount of kick you would like. I used a 1/2 a bottle this last time and I thought it to be just fine but my wife thought it was a bit too much saw if you like a good kick I would stay with the 1/2 bottle but if you want less of a kick I would use 1/4 to 1/3 of a bottle.



Servings: 12

*NEW* Welch's Juice Printable Coupon


With the beginning of August underway, we have seen a lot of NEW printable coupons. My favorite one of the day was: $1 off any 2 Welch's Juice products~

Crock-Pot Mexican Casserole

As I continue to add to my recipe collection here is a new one that was just added. I have decided to make it this week since there are coupons now available for Old El Paso products so I can cut down the cost. Hope you enjoy

Ingredients

  •          2 lbs Ground Lean Beef
  •          20 (6”) Corn Tortillas
  •          1 Package of Taco Seasonings
  •          1 ¼ cups Water
  •          12 oz Chunky Salsa
  •          1 (10.75 oz) Can of Cream of Mushroom Soup
  •          1 (10.75 oz) Can of Cream of Chicken Soup
  •          4 cups Shredded Mexican Cheese Blend
  •          1 can Black Beans, drained (optional)
  •          1 can Sliced Black Olives, drained (optional)
  •          1 can Sliced Jalapeno Peppers, drained (optional)

Direction

Keep you corn tortillas in the fridge to chill until ready to use

Brown the ground beef and make sure it is good and crumbly

Add the taco seasoning and water and simmer for 15 minutes

In a bowl mix together the Salas, Soups and 3 ¼ cups of the cheese. (also add peppers, olives and beans if 
you choose to use these ingredients)

In your crock pot, layer the bottom with tortillas (make the layers of tortillas double thick. This helps reduce 
the tortillas from becoming mush after cooking)

Place a layer of ground beef on top of the tortillas

Spoon cheese mixture on top of the beef

Repeat until you have used all of your ingredients, making sure to end with a layer of tortillas

Top with remaining cheese. You may also choose to add a few olives on top with the cheese

Cover

Cook on high for 45 minutes to 1 hour

Here are a few additional variations you can make with this:

Instead of ground beef, you can use 4 frozen chicken breasts. For this simply add your chicken into your crockpot and cook with the taco seasoning and soups on low until done, about 4 hours. Shred chicken and take soup mixture out and mix in cheese and optional ingredients. Then begin layering as above.

You can also try using shredded beef by cooking a roast with the taco seasoning, soups and a yellow bell pepper, chopped. Cook in slow cooker on low for 4 to 6 hours or until done.Remove roast and shred. Remove soup mixture and add in cheese and optional ingredients and layer as above.

Serves 6

Chili's: FREE Chips & Queso

New Bisquick Coupon Available

First of the month is always a happy time around our house as it means new on-line coupons are available to print. Thanks to the CouponCentsation for alerting me to several new coupons that will help in keeping some of my meals down in cost. I will share of few of these coupons this afternoon and tomorrow so you can have them for some of the already mentioned recipes on this site plus upcoming ones. First is one for saving $0.50 on Bisquick, which is great for making those fresh fruit cobblers this time of year.

Chicken 'N Dumplings

My wife loves Chicken ‘N Dumplings, especially her grandma’s. So I have tried to find one that is simple and tastes good, too, and here is the recipe I use. Enjoy



Ingredients
  •          4 Chicken Breasts
  •          2 Cans Refrigerated Biscuits ($0.30 off 2 Pillsbury Refrigerated Biscuits
  •          1 can Cream of Chicken Soup
  •          3 Bouillon Cubes
  •          1 tsp Garlic Salt (Optional)
  •          2 Tablespoons Butter


Directions

First begin by boiling the chicken breasts in a large pot until done, about 20 minutes.

While the chicken boils prepare the dumplings

Sprinkle a work surface with some flour and roll out the biscuits

Roll as thin as possible and make sure they have a sprinkling of flour coating them

Cut into ½” pieces and set aside

When Chicken is done, remove and set aside to cool

Save the water the chicken was boiled in, just remove any foam on top

Make sure pot is about ¾ full, if you need to add water, do so

Bring the water back to a boil

Add the Cream of Chicken Soup, butter, bouillon cubes, and garlic salt

Stir well

Turn heat to medium

Began adding dumplings one at a time

It is recommended you only stir occasionally as the less you stir the better the dumplings turn out

Shred the chicken and add back into the pot with the dumplings

Cook until the dumplings are soft, about 30 to 45 minutes

Serves 6
